Rainy, Chilly Day?
Roasted Garlic-Potato Soup
2 cups fat-free milk (why not use fat free half and half? yum)
1 1/2 Water
1/2 Package Roasted Garlic Instant Mashed Potatoes
1 Cup Reduced Fat Sharp Cheddar Cheese, divided
1/4 tsp freshly ground pepper
I added: 2 cans diced potatoes with liquid
1 Cup Grated Carrots
1 Can Petit Peas

Freshly Cut Green Onions/Cheddar Cheese for Garnish
Combine milk, water, diced potatoes, grated carrots, mashed roasted garlic, bring to a boil. Remove from heat, add instant potatoes and stir with a wire whisk until blended. Sprinkle more cheese and green onions on top and serve. Enjoy!
I served bread twist brushed with the garlic infused oil from baking and Parmesan Cheese on top and then put the garlic butter at the table to put on the bread. I was afraid, it would be too much garlic. But the flavors were full and went well together. The most fun was making the new venture of roasted garlic with a dear friend. How we laughed!
