Heart-Warming Trilogy

My pre-scrpt: I am deeply processing two recent past events I want to share/explore with you. Both of them rocked my world in very different ways. It will take me a while to get them posted. My typing skills are degrading fast and I just won’t do something until I am empowered to do it well. In the waiting, I find myself in need of comfort on this cold dreary day on the outside as well as on the inside. Here’s some “comfort food” to share. Enjoy:)

A Recipe For My Table Next Week

Land O’Lakes
Super Easy Chicken & Rice Soup

Use leftover rice and purchase a rotisserie chicken to make this super easy yet heartwarming soup.

6 servings
1 tablespoon Land O Lakes® Butter
1 small (1/2 cup) onion, chopped
2 to 3 ribs (1 cup) celery, sliced
2 to 3 medium (1 cup) carrots, coarsely chopped
(1 can sweet corn, we love corn)
1 teaspoon finely chopped fresh garlic
48 ounces (6 cups) chicken broth
1 cup water
1/2 teaspoon smoked paprika (this is supposed to be a new great new seasoning)
2 cups cooked rice*
2 cups skinned, boned, chopped deli rotisserie chicken (I cut up chicken with kitchen scissors)
2 tablespoons chopped fresh parsley, if desired

Salt, if desired
Pepper, if desired
Melt butter in 4- to 6-quart saucepan over medium heat until sizzling. Add onion, celery, carrots and garlic; continue cooking 3-5 minutes or until onions are softened.

Add chicken broth, water and paprika. Continue cooking, stirring occasionally, 7-9 minutes or until mixture comes to a boil and carrots are tender. Stir in rice, chicken, corn and parsley. Cook 5-7 minutes or until heated through. Season with salt and pepper, if desired. Serve immediately.

*Substitute cooked wild or brown rice.  (I’ve seen it served with mexican cheese and fresh avocado as a garnish)

To save some time, purchase a bag of matchstick or julienne carrots for this recipe.

    • I actually found this while doing research online about a year ago or so. I showed my dad, and he contacted the physician who came up with it. A lot of the protocol involves coconut oil and things like that. My mom has been on a modified version of the protocol for about a year now. Thanks! (Just thought I’d save my mom a few words of typing)..I hope you don’t mind.

  1. Tracey, you have “rocked” my world! Just yesterday, reading Mark 6 & John 6 about Jesus feeding the five thousand…YOU came to mind immediately. You are the boy so willingly giving up what little he has so that Jesus can accomplish ALOT. The boy’s gift may seem meager and ordinary but it speaks volumes about his selfless heart. It led me to offer a very small gift to you in the mail today, I hope you enjoy and find comfort in it.
