In Honor to our Megan, Salutatorian, 2014 High School Graduating Class

In 1st grade, Dunham has a tradition to make a time capsule that your parents hold in safe keeping until the weekend of your graduation. You are allowed to choose what goes into the time capsule, for example, stories you wrote, pictures of special memories, old school t-shirts, strings that measured your height in your 1st grade year, journal entries, etc. After the Baccalaureate every student that was there in first grade takes their boxes and opens them up while family watches. It is such a fun time, the students reminisce together about 1st grade memories while families share in the experience/teary for moms.

Tres Leches (Milk Cake)-Megan’s Favorite Birthday Cake
Servings: 24
“This light and fluffy tres leches cake recipe uses four types of milk and is topped with whipped cream, making it extra moist and delicious.”
INGREDIENTS:
1 1/2 cups all-purpose flour/cake flour
1 teaspoon baking powder
1/2 cup unsalted butter
1 cup white sugar
5 eggs
1/2 teaspoon vanilla extract
2 cups whole milk
1 (14 ounce) can sweetened condensed
milk
1 (12 fluid ounce) can evaporated milk
1 1/2 cups heavy whipping cream
1 cup white sugar
1 teaspoon vanilla extract
DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9×13 inch baking pan.
2.Sift flour and baking powder together and set aside. (A fun way to cheat on sifting is to whisk ingredients.)
3.Cream butter or margarine and the 1 cup sugar together until fluffy. Add eggs and the 1/2 teaspoon vanilla extract; beat well.
4.Add the flour mixture to the butter mixture 2 tablespoons at a time; mix until well blended. Pour batter into prepared pan.
5.Bake at 350 degrees F (175 degrees C) for 30 minutes. Pierce cake several times with a fork.
6.Combine the whole milk, condensed milk, and evaporated milk together. Pour over the top of the cooled cake.
7.(I do whipped cream topping day of…Don’t forget to chill bowl and mixing whisk.) Whip whipping cream, the remaining 1 cup of the sugar, and the remaining 1 teaspoon vanilla together until thick. Spread over the top of cake. Be sure and keep cake refrigerated, enjoy!

 Deluxe Spiced Tea Mix

 A steaming mug is a wonderful way to warm up on chilly mornings. A great Valentine Gift 🙂  It’s a taste of home: Let’s share a cup filled with a warm, spicy/sweet sip of God’s goodness.
120 ServingsPrep/Total Time: 10 min.

Ingredients

  • 2 jars (21.1 ounces each) orange breakfast drink mix
  • 1 cup sugar
  • 1 envelope (5 ounces) sweetened lemonade drink mix
  • 1 jar (3 ounces) unsweetened instant tea
  • 2-1/4 cups red-hot candies
  • 2 teaspoons each ground allspice, cinnamon, cloves and nutmeg

Directions

  • In an airtight container, combine all ingredients. Store in a cool
  • dry place up to 6 months. Yield: 10 cups (about 120 servings).
  • To prepare tea: Dissolve 4 teaspoons mix in 1 cup boiling water; stir
  • welll. Yield: 1 serving.

Our special “Sean” Casserole: Holidays/Beach/Company

Ingredients:

I package low fat cream cheese

1 package ground sweet or hot sausage (your preference)

2 package cans crescent rolls

1 onion, 1 red, 1 green bell pepper

beaten egg

Instructions:

Pam 8×10 Casserole Dish

Chop veggies small

Brown and rinse sausage

Put sausage back in pan and sauté veggies till soft

Cool slightly, mix in cream cheese

Open rolls, lay whole package to fit, pinching seams

Spread sausage/cream cheese over flattened rolls

Lay the other can rolls on top, pinch seams

Brush with beaten egg

Bake 350 about 20 minutes until top is browned

Let cool slightly: Cut into squares enjoy!

Cat Dressed Up Like Reindeer

While our kitty friend has capped the subject of Reindeer. . .

My Aunt Gay made reindeer cookies every Christmas. I would go to visit through their back door. It was always open if they were home 🙂 Just like their family is and was to me. I considered it and still do my second home. (tears)  My cousins were more like my siblings growing up because I did not have any siblings at home. How many of us are blessed to have one home even, not two with that you are always welcome here with open arms place to secure our heart?

So, in the spirit of Aunt Gay’s open house for me,

I offer and celebrate these no stress cuties!

1. Just buy sugar cookie dough. Cut plain pretzel twists to make antlers.

2. Assemble your semi-sweet chocolate chips and we use red mms.

3. Slice sugar cookie dough and tuck antlers in, eyes and nose pressed slightly.

4. Use fingers to pinch in lower third for face shape.

5. Bake to sugar cookie directions. Bee careful to remove from oven before cookies brown 🙂

Great family fun with little kids or big kids!

To honor in memory of my Aunt, we’ll just call them,

“Aunt Gay’s Reindeer Cookies`”

Would be a great tradition to start leaving these cuties out for Santa Claus!

Recipe Rave: Easy Fall Harvest Muffins and a Warm Vanilla treat

We make chocolate harvest muffins and warm vanilla milk for a breakfast or after school treat. So easy and nurturing 🙂

Chocolate Harvest Muffins (moist, pretty cracked top/don’t over bake)
1 box chocolate cake mix
1 can solid pack pumpkin
(hide extra vitamins: envelope chocolate instant breakfast or chocolate muscle milk, scoop)
Hand mix batter
Hand Pour into one dozen muffin tins (Best served warm)
Cook 325 degrees, 20 minutes or so, check when comes out clean center
No oil/butter and full of vitamin A and vits from added “mix”

Warm Vanilla Milk
Fat Free Half or 2% milk (warm in microwave)
Add One Tblsp Real Vanilla Extract (to taste)
About One Tblsp Brown Sugar (to taste)

We stumbled upon a great recipe in Pinterest that is our family favorite and it’s healthy!
So easy and delicious, is an understatement!

Ingredients:
Package Boneless/Skinless Chicken Breast
Envelope Italian Seasoning
Jar Banana Peppers

 

 

 

 

 

 

 

 

Spray Crock Pot Pam
Wash and Pat Dry Paper Towels Chicken Breast
Put in Crock Pot
Sprinkle Italian Seasoning
Pour, with juice, jar of banana peppers on top

Cook
In Crock Pot, 8 to 10 hours on low
Shred while warm with fork or in mixer

Enjoy
Serve Warm As
Slidders on Hawaiin Rolls with Ranch Dressing (make your own with greek yogurt)
Soft Chicken Tacos on flour tortillas with cheese, avocado, etc
Use in Chicken Enchiladas with favorite sauce
Use in Chicken Stack salad with favorite toppings
